Fastest ever apple cake

  • 125g plain flour
  • 100g caster sugar
  • 160ml buttermilk
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 egg
  • 1 apple (or other fruit), sliced
  • Pre-heat the oven to 180 C / Gas 4.
  • Mix the flour, sugar, buttermilk, baking powder, nutmeg, cinnamon and egg together with a spatula until homogeneous.
  • Add the sliced fruit to the mixture and stir. You may also put the slices on the bottom of the baking tin and pour the mixture over them.
  • Pour mixture in a baking tin (I used a plum-cake tin), put in the oven and bake for 30 minutes, or until the cake tests done in the centre with a wooden skewer. When ready, take out of the oven, turn the cake upside-down on a frill and let cool.
