Flaked salmon and grated potatoes form the base of these delicious fish cakes. Whilst the Italian herbs, red peppers and mushrooms add to the flavour. You can also make smaller fish cakes and serve them as finger food.
Just because this is low calorie doesn't mean it's lacking in flavour or portion size. I've played around with this recipe and it'll deliver four man-sized portions and plenty of flavour for less than 500 calories per serving! I achieved most of this simply by substituting half of the potato for swede (the swede gives the mash a nice colour too) and using a low calorie cheese spread instead of Red Leicester or Cheddar.
Catchy name aside, this dream dish was really a delightful accident. Attempting to make fish pie pasties, I ended up with parcels that opened in the oven to form puff pastry bowls. I will be making this again and again - gorgeous!
