Oaty Apple and Cranberry Cookies

  • 225g butter, softened
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1 1/2 teaspoons bicarbonate of soda
  • 440g dark brown soft sugar
  • 500g apple sauce
  • 250g plain flour
  • 485g porridge oats
  • 240g dried cherries
  • 180g dried cranberries
  • Cream together butter, cinnamon, cardamom, bicarbonate of soda and dark brown soft sugar. Mix in apple sauce. Gradually blend in flour and then the oats. Stir in dried cherries and cranberries. Let dough rest for 1 hour.
  • Drop the heaped teaspoons of the batter onto ungreased baking trays.
  • Bake at 180 C / Gas 4 for 10 to 12 minutes or until edges are slightly browned. Cool on wire rack.
