Christmas Brussels salad

  • 1 tablespoon olive oil
  • 500g cooked Brussels sprouts, sliced
  • 50g walnut pieces
  • 1 red apple, cored and sliced
  • juice of 1 lemon
  • 2 tablespoons cranberry sauce
  • 1 tablespoon extra virgin olive oil
  • 4 handfuls watercress, spinach and rocket salad
  • Heat the oil in a frying pan over a medium heat and fry the sprouts and walnuts for 1 to 2 minutes. Remove from the heat and toss in the apples.
  • Whisk the lemon juice with the cranberry sauce and oil and toss into the salad with the sprout mixture. Serve.
