Spin the wheel
Christmas Brussels salad
- 1 tablespoon olive oil
- 500g cooked Brussels sprouts, sliced
- 50g walnut pieces
- 1 red apple, cored and sliced
- juice of 1 lemon
- 2 tablespoons cranberry sauce
- 1 tablespoon extra virgin olive oil
- 4 handfuls watercress, spinach and rocket salad
- Heat the oil in a frying pan over a medium heat and fry the sprouts and walnuts for 1 to 2 minutes. Remove from the heat and toss in the apples.
- Whisk the lemon juice with the cranberry sauce and oil and toss into the salad with the sprout mixture. Serve.
