Mesfouf (Couscous with raisins)
- 100g raisins or sultanas
- 500g fine couscous
- 500ml boiling water
- 1 pinch of salt
- 3 tablespoons butter
- orange blossom water (optional)
- Place the raisins in a small bowl and cover with warm water. Set aside to soak.
- Place the couscous in a large heatproof bowl. Add the boiling water and salt and cover. Let sit for 5 minutes. Stir with a fork and let sit until the water has been fully absorbed, another 5 minutes.
- Drain the raisins. Cut the butter into small cubes and add it to the couscous together with the raisins. Stir in some orange blossom water if desired. Fluff again with a fork and serve.
