Mesfouf (Couscous with raisins)

  • 100g raisins or sultanas
  • 500g fine couscous
  • 500ml boiling water
  • 1 pinch of salt
  • 3 tablespoons butter
  • orange blossom water (optional)
  • Place the raisins in a small bowl and cover with warm water. Set aside to soak.
  • Place the couscous in a large heatproof bowl. Add the boiling water and salt and cover. Let sit for 5 minutes. Stir with a fork and let sit until the water has been fully absorbed, another 5 minutes.
  • Drain the raisins. Cut the butter into small cubes and add it to the couscous together with the raisins. Stir in some orange blossom water if desired. Fluff again with a fork and serve.
